Pizza dough

We eat pizza on about a weekly rotation. We all love bread and cheese and tomato sauce, so it definitely gets a presence in our diet. Our daughter even requested to eat pizza for her 2nd birthday!

This is my go-to pizza dough recipe over the last year or so (found originally at Chef In Training). It's pretty straightforward and works well for me. If I find a better recipe I'm not opposed to updating, but I'm not actively searching for one. When I make pizza, I often make a couple batches of dough so I can make pizzas to freeze as well. Here's where I originally learned the process for freezing pizzas.

Pizza Dough
yield: dough for 2 pizzas

2 cups warm water
1 Tbsp yeast
1 Tbsp salt
1/4 cup oil
5 cups flour
  1. Proof yeast in warm water for a few minutes. Add salt and oil; stir to mix.
  2. Add flour and stir well to combine. When it begins to form a sticky dough, pour out onto well-floured surface and knead until smooth, adding flour as needed to keep it more toward smooth than sticky.
  3. Return to bowl; cover and let sit for 10-20 minutes.
  4. Divide in two. Roll out each ball into a flat circle to fit your pizza pan. If rolled very thin it is possible to make a stuffed crust by placing cheese near the edges and folding in on itself (highly recommended!).
  5. Place rolled-out dough onto baking pan (either directly or you can sprinkle some cornmeal onto the pan and place the dough on top).
  6. If making to freeze, follow instructions below*
  7. If making pizza to eat, generously apply preferred sauce (I just use jarred pasta sauce... easy!) and mozzarella cheese. Sprinkle favorite toppings and bake about 10 minutes at 500°F, or until toppings are bubbly and crust is beginning to brown.
*To prepare pizzas to freeze and cook at a later date:
  1. After rolling out the dough and placing it on pizza pan (and stuffing crust, if desired), bake for about 6 minutes at 500°F.
  2. Let cool, and if needed, transfer to a surface suitable for freezing. Then generously apply preferred sauce and mozzarella cheese. Sprinkle favorite toppings now or before cooking at a later date.
  3. Place in freezer and allow to freeze solid, at least several hours. Transfer to a large ziplock bag or other (preferably air-tight) packaging. 
  4. To cook from frozen, simply remove pizza from packaging, place on pizza pan, and bake at 500°F for 12-18 minutes, or until toppings are bubbly and crust is beginning to brown.

Chicken Tikka Masala



This recipe for chicken tikka masala is slightly adapted from Mel's Kitchen Cafe. It is spicy, flavorful, totally delicious... and a great way to use up plain yogurt ;)

For this India-inspired British dish, begin by marinating chicken in yogurt and pungent spices for one hour. Start some rice. Then, while pan-frying the chicken, cook up a creamy, spicy, tomato-based sauce which pairs beautifully with the chicken, and serve it up over rice. I almost can't eat it without some naan on the side, too!

Chicken Tikka Masala
(serves 3-4)

Chicken Marinade ingredients:

2 boneless, skinless chicken breasts
1 cup plain yogurt
1 Tbsp lemon juice
2 tsp ground cumin
1 tsp ground cinnamon
1/2 tsp cayenne pepper
1 1/2 tsp paprika
2 tsp pepper
1/4 tsp ground ginger
1 tsp salt

  1. Slice raw chicken into strips or bite-sized chunks.
  2. Combine yogurt, lemon juice, spices, and salt in a large bowl. Add cut-up chicken, stirring to coat well. Refrigerate for an hour (or up to 8 hours).
  3. Heat frying pan and cook chicken over medium heat until done.


MEANWHILE....

Masala ingredients:

1 Tbsp butter
1/2 to 1 tsp garlic powder (or 1 clove garlic, minced)
2 tsp ground cumin
2 tsp paprika
1/2 tsp salt
8 ounces tomato sauce (one small can. I use the no salt added variety)
1 cup milk/cream (or Mexican crema worked really well)

  1. Melt butter in a small saucepan. 
  2. Add spices and heat until aromatic. 
  3. Stir in tomato sauce and milk or cream. Milk is likely to curdle, but this is fine. 
  4. Cook over low heat until sauce is hot and thick. Pour over chicken in its entirety, or serve separately if preferred. 
Serve hot over rice and ideally with naan -- yummy!

Simple Mexican crowd-pleasers


 Several months ago we had the privilege of having dinner at Thomas' cousin Ryan's home. His lovely wife Amanda prepared a Mexican food feast that was muy bueno. Earlier this week, we tried out the main dish from this party, "New Mexico Style Carnitas," at our own dinner party with some friends - our dinner contest winners, in fact. It was pretty simple to put together and tasted fantastic.

Carnitas
2.5 lbs carnitas (pork shoulder) cut into bite-sized pieces
5 roasted/peeled anaheim chiles, or 1 can green chiles in a pinch
2-3 cloves of fresh garlic, minced
salt to taste
1 c water
2 tbsp cooking oil
**I altered this a little and added about 1/3 a medium-sized yellow onion. The package of meat we got was a little larger than this recipe called for, so I added more garlic (close to a full "head" of garlic).
  1. Heat oil in a large sauté pan. Add garlic (and onions if you choose to do so) and salt; then add pork and sauté until pork is cooked (about 7 min). 
  2. Transfer to a crock pot and add chile and water. Stir together and cook on high for 3 hours or low for 6-8 hours. 
  3. Transfer to oven safe dish and finish at 400°F in the oven, uncovered, for 20 minutes.





We served our carnitas on warm corn tortillas with guacamole (also homemade - mash up an avocado or two, add sour cream, salt, pepper, and some chili powder) and salsa. We had this Mexican rice as a side.

Mexican rice
3 tablespoons vegetable oil
1/4 cup (or more) chopped onion
a few cloves minced garlic OR garlic powder to taste
salt to taste
1/2 teaspoon ground cumin
1 cup uncooked long-grain rice
1/2 cup tomato sauce
2 cups chicken broth
  1. Heat oil in saucepan large enough to cook rice. Add onion, garlic, salt, and cumin; sauté until transparent. Add uncooked rice and coat with oil.
  2. After a few minutes, stir in remaining ingredients. Bring to a boil.
  3. Turn down heat, cover, and let simmer for 20-25 minutes.

Layered Pasta Dish (Lisa's ideal title)

Ah, the wonders of pasta. So easy to make. Easy enough, in fact, that we figured we'd show you how it's done. We have faith in you.

The basic steps to cooking pasta are as follows:
  1. Acquire or make the noodles
  2. Boil the noodles
  3. Drain the noodles
  4. Eat the noodles
However, we figured we'd mix this last step up due to inspiration from Camille and a few others...


Actually, we'll still perform step four, just as a new number. Proceed to below:

Layered Pasta Dish (AKA lasagna)
1 package of lasagna noodles
15 oz. ricotta cheese
1/4 lb mozzarella (grated)
1 lb. ground beef
15 oz. can of diced tomatoes
16 oz. bottle of tomato sauce
spices (Italian seasoning, garlic powder, salt, etc.)

  1. Preheat the oven to 400°F.
  2. Cook the noodles al dente (not too soft).
  3. Brown the ground beef and add spices as desired.
  4. Add tomato sauce and diced tomatoes to the ground beef.
  5. Layer the ingredients as follows, ending with pasta then mozzarella:
    1. Pasta
    2. Meat/sauce
    3. Cheese
    4. Pasta...
  6. Put in the oven for 30-40 minutes.
  7. Remove. Serve. Eat. Enjoy. Leave a comment on our blog.

Bradshaw Taqueria ?

Thomas bragged on these burritos for months before I finally got to try them! We first made them together about 2 months ago and while I must admit I was skeptical at first, this is now probably one of my favorite recipes. We made these together a second time while visiting my family over Christmas vacation.

The Swiss cheese was the ingredient I shied away from the most at the beginning. I love cheese, but Swiss has never been a favorite of mine. It works pretty well with the other ingredients, though, so I'd definitely recommend it. Additionally, the bean/tomato sauce process does seem kinda strange the first time. But trust me, it's worth it!!!

Thomas' Burritos

Tortilla ingredients:
1 part vegetable oil (we used 1 1/2 c oil/milk/water to make 15 tortillas)
1 part milk
1 part water
flour
  1. Begin by mixing equal parts oil, milk, and water. Add flour and continue to mix until batter becomes a thick consistency.


  2. Keep adding flour, kneading until mixture becomes doughy.


  3. Separate dough into small balls. They should fit in your cupped hand.



  4. Roll out the dough. Try for somewhat round and very thin tortillas. They shrink up and thicken a bit in the pan.


  5. Sprinkle a bit of salt into a heated frying pan. Transfer one tortilla into the frying pan. As it cooks, the color will change slightly. Once the bottom is thicker and a more golden color, use a spatula, or if you're like Thomas, your hands, to flip it over and cook the other side.

  6. Stack cooked tortillas until filling is ready!


Beans:
2 cans Cannellini beans (White Kidney beans)
1 small (8-0z) can tomato sauce
spices: cumin, thyme, basil, salt to taste

  1. Drain beans. Combine beans and tomato sauce in a saucepan. Save one bean can; remove label and wash.



  2. Drain off a bit of the tomato sauce and use the clean can to mash the beans.


  3. Add spices to taste. Thomas likes a lot of cumin.

  4. Cook bean mixture on the stovetop until heated.

Other ingredients:
1 green bell pepper, chopped
2 tomatoes, diced
grated Swiss cheese
sour cream


To assemble:
Begin with a tortilla. Spread on a bit of the bean mixture and some sour cream. Add grated Swiss cheese and sprinkle in a few tomatoes and peppers. fold bottom up and sides around. ENJOY!!
